Mushrooms

Shiitake Mushrooms

Shiitakes are grown in a natural forest on sustainably harvested logs. 

DRIED: $6/oz   Available year round.

Oyster Mushrooms 

Oysters are grown on both logs and straw.

Lions Mane Mushrooms

Lions Mane fruit in the spring and fall on sugar maple and beech logs in our woodlot.

Animals

The main role of animals in our farm landscape is to support the restoration of the land and reduce pest and disease pressure. Along the way, we ensure these animals have the utmost care and are able to express their inherent nature and have an enjoyable working membership in our farm ecosystem.

We achieve this by rotating our animals, offering sustenance from the land as much as possible, and monitoring and supporting their healthy existence above any goals for production or yield.


Ducks

Our ducks patrol the forests, gardens, and pasture of the farm, foraging on cover crops and dining on slugs and other bugs while providing eggs and occasionally meat for the table. We raise khaki campbell and cayuga ducks, along with two african geese for predator protection.

For our first two seasons we raised, harvested, and sold ducks as part of a research project funded through Northeast SARE, exploring the potential of ducks as pest control agents in our shiitake mushroom production areas. CLICK HERE for more info. 


Duck Eggs 

Duck eggs are on average slightly larger than chicken eggs with a slightly larger and more flavorful yolk. Use as you would with chicken eggs or in baking.

Sheep

Our Katahdin sheep produce flavorful and tender meat. They graze on pasture, keeping our meadows and themselves healthy and vibrant.

Katahdin's are a hardy, hair variety that was bred in Maine. They are a medium sized breed that generally lamb on their own, exhibit strong maternal instincts and are resistant to disease and parasites. 

Lamb: $6.50/lb hanging weight, which averages around 40 - 55 lbs per sheep (The hanging weight at the butcher is after the head, hide, and internal organs have been removed). Half a lamb will cost $150 - $175 and a whole $300 - $350. Your order includes a variety of cuts for the freezer; all excellent for cooking roasts or stews.  Available in October & November! Order early, limited quantities available.

Pelts: The skin and hair of our sheep is luscious, beautiful and warm. Most of our sheep are mainly white, with various patters of brown and black spots. Pelts are available about January, prices range from $100-200 per pelt depending on size, color and quality of tanning. Photos will be posted when pelts are ready. 

Maple Syrup

Making maple syrup gives us a chance to get outside in one of the most dynamic times of the year, when winter thaws to spring. We have a 1-acre sugarbush where we tap 100 trees with buckets each season, boiling it down in the woods and offering a very limited amount for sale in canned mason jars the old fashioned way.

Elderberry

We harvest and process a limited supply of wild elderberry into juice and medicinal syrups.  We are expanding this harvest to several hundred bushes for future production and as part of our creek and waterway restoration at the farm.

Paw Paw

The Paw Paw is a native tree-fruit, very tropical in nature, that has a mango-banana custard flavor. Our orchard was planted in 2015, which will be grafted with selected cultivars proven to thrive in New York.

We sell paw paw as a mash, deseeded and frozen. It's great for smoothies, ice cream, pie fillings, and more.
